  • Cook Time: 35 minutes
  • Total Time: 55 minutes

Servings

Serves 6–8 people

Ingredients

  • 12 ounces spaghetti
  • 2 cups cooked chicken, shredded
  • 1 can (10 ounces) Rotel diced tomatoes with green chilies
  • 1 can (10.5 ounces) cream of chicken soup
  • 1 package (8 ounces) cream cheese, softened
  • 2 cups shredded cheddar cheese, divided
  • 1 cup shredded mozzarella cheese
  • 1 small onion, diced
  • 3 garlic cloves, minced
  • 2 tablespoons butter
  • 1 cup chicken broth
  • 1 teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon black pepper
  • ½ teaspoon salt
  • ¼ teaspoon cayenne pepper (optional)
  • 2 tablespoons chopped parsley for garnish

Instructions

Step 1: Cook the Spaghetti

Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package directions until just al dente.

Since the pasta will continue cooking in the oven, avoid overcooking it.

Drain the spaghetti and set aside.

Step 2: Preheat the Oven

Preheat your oven to 350°F (175°C).

Lightly grease a 9×13-inch casserole dish with butter or cooking spray.

Step 3: Sauté the Onion and Garlic

In a large skillet or saucepan, melt the butter over medium heat.

Add the diced onion and cook for about 5 minutes until soft and translucent.

Stir in the garlic and cook for another 30 seconds until fragrant.

Step 4: Prepare the Creamy Sauce

Reduce the heat to low.

Add the softened cream cheese and stir until melted and smooth.

Mix in the cream of chicken soup and chicken broth. Stir continuously until fully combined.

Next, add the Rotel tomatoes with their juices. Stir in smoked paprika, garlic powder, onion powder, black pepper, salt, and cayenne pepper if desired.

Add 1½ cups of cheddar cheese and all the mozzarella cheese. Continue stirring until the cheese melts completely into the sauce.

The sauce should be smooth, creamy, and rich.

Step 5: Combine the Chicken and Pasta

Add the shredded chicken to the sauce mixture and stir until evenly coated.

Then add the cooked spaghetti. Using tongs or a large spoon, gently toss everything together until the pasta is completely covered in the creamy sauce.

Step 6: Assemble the Casserole

Transfer the spaghetti mixture into the prepared casserole dish.

Spread the mixture evenly.

Top with the remaining ½ cup cheddar cheese.

Step 7: Bake the Casserole

Place the casserole in the preheated oven and bake uncovered for 30–35 minutes.

The casserole is ready when the cheese is melted and bubbly around the edges.

For a golden brown cheesy crust, broil the casserole for 2–3 minutes at the end of baking.

Step 8: Garnish and Serve

Remove the casserole from the oven and allow it to rest for 5 minutes before serving.

Sprinkle fresh parsley over the top for added freshness and color.

Serve warm and enjoy.

Tips for Success

Use Rotisserie Chicken

Rotisserie chicken is convenient and adds extra flavor to the casserole. Leftover baked or grilled chicken also works very well.

Cook Pasta Properly

Cooking the spaghetti to al dente prevents it from becoming mushy during baking.

Soften the Cream Cheese

Allow the cream cheese to come to room temperature before cooking. This helps it melt smoothly into the sauce without lumps.

Customize the Spice Level

Use mild Rotel for a less spicy casserole or hot Rotel if you enjoy extra heat.

Delicious Variations

Add Vegetables

Bell peppers, mushrooms, spinach, or corn make excellent additions to this casserole.

Southwestern Twist

Add black beans, jalapeños, and taco seasoning for a Tex-Mex inspired version.

Crispy Topping

Top the casserole with crushed buttery crackers or breadcrumbs before baking for extra crunch.

Extra Creaminess

Mix in ½ cup sour cream or heavy cream for an even richer sauce.

Storage Instructions

Refrigerate

Store leftovers in an airtight container in the refrigerator for up to 4 days.

Freeze

This casserole freezes beautifully. Assemble it without baking, wrap tightly, and freeze for up to 3 months.

Thaw overnight in the refrigerator before baking.

Reheat

Reheat individual servings in the microwave or warm the entire casserole in the oven at 325°F until heated through.

Add a small splash of chicken broth or milk if needed to loosen the sauce.

This casserole pairs wonderfully with:
