Keto Cauliflower Mac and Cheese Recipe

Keto Cauliflower Mac and Cheese is the ultimate low-carb comfort food—rich, creamy, cheesy, and deeply satisfying without the heaviness of traditional pasta. Tender cauliflower florets take the place of macaroni, soaking up a velvety cheese sauce that’s packed with flavor. It’s a perfect side dish or even a main course for anyone following a keto or low-carb lifestyle.

Keto Cauliflower Mac and Cheese (Creamy & Low-Carb)

Ingredients

For the cauliflower:

  • 1 large head cauliflower (about 800–900g), cut into bite-sized florets
  • 1 tsp salt (for boiling water)

For the cheese sauce:

  • 3 tbsp unsalted butter
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 100g cream cheese, softened
  • 1 ½ cups shredded cheddar cheese
  • ½ cup mozzarella cheese
  • ¼ cup grated parmesan cheese
  • ½ tsp mustard powder (optional, enhances flavor)
  • ½ tsp paprika
  • ¼ tsp black pepper
  • Salt to taste

Optional toppings:

  • ¼ cup shredded cheddar (extra for topping)
  • 2 tbsp crushed pork rinds (for a keto “breadcrumb” topping)
  • Fresh parsley, chopped

Step 1: Prepare the cauliflower

Bring a large pot of salted water to a boil. Add the cauliflower florets and cook for 5–7 minutes until just fork-tender. Be careful not to overcook them—they should still hold their shape.

Drain the cauliflower well and pat dry with paper towels if needed. Removing excess moisture is important to avoid a watery final dish.

For even better texture, you can steam the cauliflower instead of boiling, or roast it at 200°C (400°F) for 15–20 minutes to remove moisture and enhance flavor.

Step 2: Make the cheese sauce

In a large skillet or saucepan, melt the butter over medium heat.

Add the minced garlic and sauté for about 30 seconds until fragrant. Do not let it brown.

Pour in the heavy cream and bring it to a gentle simmer. Stir in the cream cheese and whisk until fully melted and smooth.

Reduce the heat to low and gradually add the cheddar, mozzarella, and parmesan cheeses, stirring continuously until melted and creamy.

Add mustard powder, paprika, black pepper, and salt to taste. Stir until the sauce is thick, smooth, and well combined.

Step 3: Combine cauliflower and sauce

Add the cooked cauliflower to the cheese sauce and gently fold to coat each piece evenly.

Let it simmer for 2–3 minutes so the cauliflower absorbs some of the sauce and the flavors meld together.

At this stage, you can serve it directly from the pan for a stovetop version, or proceed to baking for a more classic “mac and cheese” finish.

Step 4: Optional baking step

Preheat your oven to 190°C (375°F).

Transfer the cauliflower mixture into a greased baking dish.

Sprinkle extra cheddar cheese on top. For a crunchy topping, mix crushed pork rinds with a little melted butter and sprinkle over the surface.

Bake for 15–20 minutes, or until the top is bubbly and lightly golden.

For extra browning, broil for 2–3 minutes at the end—but keep a close eye to prevent burning.

Step 5: Serve

Remove from the oven and let it sit for 5 minutes before serving. This helps the sauce thicken slightly.

Garnish with chopped parsley for a fresh touch.

Serve warm as a side dish or main course.

Serving suggestions

Keto cauliflower mac and cheese pairs perfectly with:

  • Grilled chicken or steak
  • Roasted vegetables
  • BBQ meats
  • Keto meatloaf

It can also be enjoyed on its own as a hearty, satisfying meal.

Tips for best results

  • Avoid overcooking cauliflower: It should be tender but not mushy.
  • Drain well: Excess water can thin out the sauce.
  • Use full-fat dairy: This ensures a rich and creamy texture.
  • Add cheese gradually: Helps prevent clumping and ensures smooth melting.
  • Adjust thickness: If sauce is too thick, add a splash of cream; if too thin, simmer longer.

Storage and reheating

Store leftovers in an airtight container in the refrigerator for up to 3–4 days.

Reheat gently on the stovetop or in the microwave. Add a splash of cream or milk to loosen the sauce if it thickens too much.

Freezing is not recommended, as the texture of the cheese sauce may change.

Variations

  • Bacon mac and cheese: Add crispy bacon bits for extra flavor.
  • Spicy version: Add jalapeños or chili flakes.
  • Garlic herb twist: Add thyme or rosemary for depth.
  • Different cheeses: Try gouda, gruyere, or pepper jack for unique flavors.

This Keto Cauliflower Mac and Cheese proves that comfort food doesn’t need carbs to be delicious. With its creamy, cheesy sauce and perfectly tender cauliflower, it satisfies cravings while keeping things low-carb and wholesome. Whether served as a side or main, it’s a recipe you’ll come back to again and again.
